Beets in a smoothie, what?!? Trust us, it’s delicious and healthy. Your body will thank us.
Ingredients
  • 2 golden beets
  • 2 cups carrot juice
  • 4 fresh apricots, halved and pit removed *(see notes)
  • 1 orange, juiced
  • ½ apple of choice, seeded and diced
  • 1-inch fresh ginger, peeled and diced
  • 2 golden beets
  • 473.18ml carrot juice

  • 0.5 apple of choice, seeded and diced
  • 1-inch fresh ginger, peeled and diced

Preparation
STEP 1

To steam the beets: scrub beets clean, leaving root end intact and removing all but one inch of stalk. This will help minimize color bleeding. Reserve beet greens for another use. Place steamer basket in pot and steam until beets are tender, approximately 30-40 minutes.

STEP 2

When done, plunge beets into cold water. When cool, peel the beets (peel should easily release) and dice.

STEP 3

Combine cooked beets with remaining ingredients in blender and puree until well combined.

Options

If fresh apricots are not available, 10-12 dried apricots will work as well! Place dried apricots in a bowl and cover with boiling water for 10-15 minutes to rehydrate and drain. Cut each into four pieces and use in place of the fresh apricots.

For an extra fermented benefit try adding a 1/4 cup of sauerkraut.
